Torta Caprese Al limone

This cake is from Capri Island in Italy. The original Torta Caprese is made with dark chocolate and cocoa, but this version has white chocolate, almond flour, and lemon. It is soft, moist, and has a strong lemon flavor. People love to eat it, especially in summer.
The story says that a baker in Capri made a mistake in the 1920s.He forgot to put flour in the cake. But the cake was very tasty! It was crispy outside and soft inside. People loved it, and it became famous. Later, they made a lemon version with fresh lemons from Italy. 

I made this dessert, and I can say it is an easy recipe. Its taste is absolutely delicious. So, let's move on to the next recipe!

 


Ingredients

  • 4 eggs
  • 50 grams of white chocolate
  • 100 grams of butter
  • 150 grams of granulated sugar
  • Zest of 3 lemons (grated)
  • 200 grams of almond flour
  • 50 grams of starch
  • 1 packet of vanilla
  • 1/2 packet of baking powder
  • A pinch of salt
  • 1 tablespoon of lemon juice

For serving:

  • 1 tablespoon of powdered sugar

Steps:

  1. Separate the egg yolks and egg whites into different bowls.
  2. Melt the white chocolate and butter in a small pan over very low heat.
  3. Add the sugar and lemon zest to the egg yolks. Mix with a mixer until fluffy. Slowly add the melted chocolate and butter mixture.
  4. In another bowl, mix almond flour, starch, vanilla, baking powder, and salt. Add this to the egg yolk mixture and mix with a spatula.
  5. Add the lemon juice to the egg whites. Beat with a mixer until stiff and white.
  6. Add one-third of the egg whites to the other mixture and mix gently. Then, slowly add the rest and mix with a spatula until no white parts remain.
  7. Pour the cake batter into a 23 cm springform pan lined with baking paper. Bake in a preheated oven at 160°C for 45 minutes.
  8. Let the cake cool to room temperature. Sprinkle powdered sugar on top, slice, and serve.
