Chelo Kebab

Chelo Kebab is one of the most famous dishes in Iranian cuisine, and its origins date back to the Persian Empire. Initially, it was a simple grilled meat dish, but over time, it became enriched with spices and served with rice. Especially during the Safavid period (1500s), this dish became more popular and turned into a symbol of hospitality and abundance in Iranian culture.

This dish is not just a meal, but also a tradition that strengthens social bonds. On special occasions like weddings, holidays, and big celebrations, hosts serve Chelo Kebab to their guests as the best dish. It is seen as an expression of hospitality, warmth, and generosity in Iran. Today, it remains a beloved dish both in Iran and around the world.


Ingredients:

  • 500 grams of beef or lamb (cut into pieces)
  • 1 medium onion (about 100 grams, grated)
  • 1 tablespoon (15 grams) of yogurt
  • 1 teaspoon (5 grams) of salt
  • 1 teaspoon (5 grams) of black pepper
  • 1 teaspoon (5 grams) of cumin (optional)
  • 1 tablespoon (15 ml) of vegetable oil
  • 1 tablespoon (15 grams) of butter
  • 1 cup (200 grams) of basmati rice (or regular rice)
  • 1 small glass (100 ml) of water

Instructions:

  • Grate the onion. Put the meat in a bowl and add yogurt, salt, black pepper, and cumin. Mix well.
  • Add some vegetable oil and mix again. Let the mixture sit in the fridge for 1 hour.
  • After marinating, thread the meat onto skewers. Cook the meat on a hot grill or barbecue.
  • Cook the rice in the usual way and place it on serving plates.( rice recipe for chelo kebab)
  • Put the kebab on top of the rice and add butter on top.
  • Serve hot.
